Pickled peaches

Ingredients: 

4 peaches

3 cups champagne vinegar

3 tablespoons sugar

5 black peppercorns

3 cloves

2 allspice berries

1 cinnamon stick

dime-sized piece of fresh ginger, peeled

 

Directions: 

Slice the peaches in half and remove the pits. Slice each half into quarters, then slice each quarter into three pieces.

Place the peach pieces in glass canning jars.

Over medium heat, combine remaining ingredients and bring to a boil. Reduce heat to low and simmer for five minutes. Pour over peaches in jars. Screw on lids, let cool to room temperature, then store in refrigerator.
