Appetizers- Spiced Chicken Croquettes
13/4 pounds raw chicken breasts, boned, skinned, and cut into pieces1/4 cup thinly sliced green onion1 teaspoon ground coriander1/2 teaspoon salt1/4 teaspoon ground cumin1/4 teaspoon ground pepper2 medium garlic cloves, minced2 eggs, beaten to blend3 tablespoons flour mixed with 2 tablespoons dry breadcrumbscanola oil for fryinglemon wedges for garnishRoughly chop chicken in food processor. Add onion, coriander, salt, cumin, pepper, and garlic. Pulse to blend. Form heaping teaspoonsful into balls and dip into eggs, then coat with flour mixture, shaking off excess.Pour oil into wok to depth of 1/2-inch and heat over medium heat. Add croquettes and fry until browned and lightly crisped, 3 to 4 minutes on each side. Remove from oil and drain on paper towels. Serve warm with lemon wedges and one or several of the dipping sauces.
