Adagio Bakery's Jalapeno Cheddar Corn Bread

Ingredients: 

1 cup yellow cornmeal

1 cup all-purpose flour

1/2 cup sugar

1 tablespoon baking powder

3/4 teaspoon salt

1 1/4 cups milk

1/2 cup vegetable oil

3 large eggs, room temperature

1 jalapeno pepper, seeds and stem removed, finely chopped

1/2 cup shredded sharp

cheddar cheese

Directions: 

1. Preheat the oven to 275 degrees F. Grease a 9- by 13-inch baking pan.

2. Combine dry ingredients in medium-sized mixing bowl. In a separate bowl, beat eggs, oil and milk. Add liquids, jalapenos and shredded cheese to the dry mixture, and stir just until blended. Do not over mix! (Note: The batter will begin to rise as soon as the liquid and dry ingredients are mixed, so combine them right before you pour the batter in the pan.)

3. Pour batter into prepared baking dish and bake for 20 to 25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
