"Destination Dish" of the Month
I am always searching for the perfect restaurant lunch dish, or "destination dish" I call it, and today I discovered one that tops my list. My friend Suzanne Brown treated me to lunch at Canoe (it had been awhile for both of us) and I chose the fresh fish special—a colorful mound of textures and flavors that will forever stand out in my memory. Restng on a bed of wilted arugula was a layer of pearl couscous tossed with kernels of fresh corn, some garlic and just a little roasted pepper for depth, crowned with panko-crusted Cod...then drizzled on the edge with basil-infused olive oil. The dish was the brainchild of Sous Chef Chris Hall who promised me that the dish would be considered for full-time status on the menu. The flavors were flawless.
